How to Ship Chocolate in Summer Without It Melting
Chocolate does not need to reach its melting point to be ruined. Bloom, texture loss, and separation start in the low 80s — which is most of the country for most of the summer.
Chocolate is one of the least forgiving things you can put in a box. It has a narrow tolerance, it fails in ways that are immediately visible to the customer, and the failure happens at temperatures that feel completely unremarkable.
If you sell chocolate, confections, or anything with a cocoa butter coating, summer shipping is a recurring problem with a fairly well-understood solution. Here is what actually matters.
The temperature that ruins chocolate is lower than you think
Cocoa butter fully melts somewhere around 93°F, and that number gets quoted constantly. It is also the wrong number to plan around.
Chocolate starts losing its temper — the crystal structure that gives it snap and shine — considerably earlier, in the low 80s. Once that structure breaks down and re-solidifies, you get bloom: the pale, chalky, streaky surface that makes a customer assume the product is old or spoiled. The chocolate is perfectly safe to eat. It also looks like something you would not want to eat, which for a premium product amounts to the same thing.
Worse, bloom is caused as much by temperature cycling as by peak temperature. A package that warms during the day, cools overnight in a facility, then warms again the next afternoon can bloom even if it never got close to 93°F. Three days in transit means three of those cycles.
So the practical threshold for shipping is roughly:
- Below 75°F — generally fine
- 75 to 85°F — bloom risk, especially with repeated cycling
- Above 85°F — expect visible degradation without active cooling
- Above 93°F — actual melting, and possibly leakage through packaging
For most of the United States, from June through September, a multi-day ground route is going to spend meaningful time above 85°F. That is the core of the problem.
Standard shipping has no cooling
Worth stating plainly, because it catches new sellers off guard: no standard carrier service is refrigerated. Trailers sit in the sun. Sort facilities are large buildings with dock doors constantly opening. Delivery vans are metal boxes that can run substantially hotter than the outside air, and the package may then sit on a doorstep in direct sun for hours after it is marked delivered.
The last mile is frequently the worst part of the entire journey, and it is the part shippers control least.
Most carriers also exclude perishables and heat damage from liability coverage, so a melted shipment is generally your loss rather than a claim. Check your carrier’s terms before assuming otherwise.
What actually works
Ship early in the week
This is the highest-leverage change and it costs nothing. A package entering the network on Thursday can sit through the weekend in a facility, adding two days of thermal cycling for no reason. Ship Monday through Wednesday so the package keeps moving — the scheduling reasons behind this are in the best day of the week to ship.
Buy speed instead of insulation
Insulation slows heat transfer. It does not remove heat. A well-insulated box in a 90°F trailer eventually reaches 90°F — insulation only determines how long that takes.
This means transit time is the dominant variable, not packaging. Two-day air through hot weather is usually safer than ground with an expensive cold pack, because you have cut the exposure window roughly in half. When the weather is genuinely hot, overnight is often the only responsible option, and the cost difference is smaller than the cost of replacing ruined orders and absorbing the customer service load.
Use phase-change packs, not regular ice packs
Standard gel packs are designed to keep things near freezing, which is too cold for chocolate — it causes condensation and sugar bloom when the package warms back up. Phase-change materials tuned to around 65°F hold chocolate in its comfortable range without shocking it cold.
Pair them with a foil-lined insulated liner, and keep the packs from touching the product directly.
Check the route, not the destination
This is where most heat damage originates. A shipment from Portland to Seattle in August is low risk. A shipment from Portland to Denver may route through a hub somewhere considerably hotter than either endpoint, and nothing in the destination forecast would reveal that. Offer held-at-location pickup
For high-value orders, letting the customer pick up at a carrier location removes the doorstep exposure entirely. It also removes the scenario where a package is delivered at 11am and sits in the sun until the customer gets home at 6pm.
Set expectations in writing
Many chocolate sellers add a summer shipping notice at checkout: cold-pack surcharge, ship-day restrictions, and a clear statement about what happens if the customer chooses standard shipping against the recommendation. This does not prevent melting, but it does prevent the argument afterward.
A reasonable summer policy
If you want a default that works without thinking about it on every order:
- Ship Monday through Wednesday only, from May through September.
- Check the forecast along the full route before committing to a service level.
- Ground only when the route stays below about 80°F for its whole length.
- Two-day with a phase-change pack and insulated liner in the 80 to 90°F range.
- Overnight above 90°F, or hold the order and tell the customer why.
- Recommend pickup for anything over a threshold you set by order value.
The one thing not on that list is “hope for the best,” which is effectively the default policy at a lot of small food businesses and the reason summer generates a disproportionate share of refund requests.

Chocolate fails at temperatures that do not feel dangerous, and it fails from repeated warming and cooling as much as from a single hot afternoon. Insulation buys hours; shorter transit buys days. The most valuable thing you can do before shipping is find out how hot the actual route gets, rather than guessing from the two cities on the label.
